What do you guys prefer? cup cakes or muffins? if you ask me i will any day prefer muffin over cup cakes. I feel cup cakes are too heavy with all those cream and butter. Muffins are a breakfast staple in my home. its so easy to grab one in the morning and go. Blueberry muffins are one of my favorite. This recipe of blue berry muffin is easy to make, large , fluffy and super yummy . Any ways moving on to the recipe, hope you guys enjoy it as much as we did .
– – INGREDIENTS – –
Blueberry – 1 cup fresh blueberries
All purpose flour – 2 cups
Sugar – 1/2 cup
Baking soda – 1/2 teaspoon
Baking powder – 1 1/4 teaspoons
Egg – 1 large
yogurt – 1 cup
Vanilla essence – 1 teaspoon
Canola oil – 1/3 cup
Salt – two pinch
– – METHOD – –
- Pre heat the oven to 350 degrees F
- Lightly beat egg and keep aside. In a large bowl whisk together yogurt, oil, vanilla extract, and beaten egg.
- In another bowl mix together all the dry ingredients. Now lightly whisk in the egg yogurt mix to the dry ingredients until you get a lump free thick batter. Add the blueberries and gently fold it in to the batter.
- Butter muffin cups or line them with paper liners. Scoop the batter evenly into all the muffin cups. Place it in the center rack of oven and bake for 2o minutes or till a toothpick inserted comes clean. Once done transfer to wire rack and serve once they are cooled down
