Spinach – 1 1/2 cup finely chopped
Onion – 1 medium sized , finely chopped
Paneer/cottage cheese – 3/4 cup grated
Garlic – 2 small cloves crushed
Green chilly – 1 to 2
Chaat masala – 1/4 teaspoon
Cumin seeds – 1/2 teaspoon crushed
Garam masala – 1/4 teaspoon
Pepper powder -1/4 to 1/2 teaspoons (optional)
Bread crumbs – 1/2 cup + 1 table spoons
Egg white – 1 egg or (All purpose flour/cornflour) – 2 tablespoon)
Oil for deep frying
Heat 1 tablespoon oil in a pan. add crushed garlic,chopped green chilly and cumin. To this add onion and salt, saute till it gets cooked.Add spinach saute for few minutes till water evaporates and it gets dry. Switch off the flame and keep this mixture aside till it gets cooled / once the temperature becomes easy to work on.Now to this add grated paneer, chaat masala, garam masala,pepper powder and one table spoon of bread crumb.Mix well with hand. Check for salt. Rub your palm with some oil. Roll these mixture in to oval shaped kabab’s.
Now dip these kabab’s in egg white [for vegetarians who do not eat egg, mix 2 tablespoons of all purpose flour in some water to get a thick consistency/dosa batter consistency and dip kabab in it .We are doing this so that the bread crumbs will stick on to the kabab while deep frying] . Roll kababs in bread crumbs so that it gets coated with crumbs evenly. Heat a wok with oil .Deep fry kababs till golden brown. Serve with chutney or ketchup.
